One of the first cheesecakes I made, it was this mini Oreo cheesecake. It reminds me of a cupcake. But it's a thousand times better. This recipe is quite easy to make. I think this recipe tastes the best when you make it the day before and let it refrigerate over night. That way the cheesecake topping sets into the cookie and makes it a bit softer. Trust me, it's the best.
